As I continue to explore raw food I’m always looking for dishes that can curb my need for very savory foods. I have always been a sucker for soup, hearty vegetable soups, flavorful stews simmered for hours – but let’s face it – on my quest to incorporate as much raw as I can, those won’t work.
Tonight I think I found a raw soup that was just about perfect and not to mention super easy and not complicated. It definitely hit the spot – and I can’t wait to continue to perfect the spice and veggie variation. I found the original recipe on a raw food forum, it was called “Spicy Cucumber Dill Soup”. I had a bit of dill that I needed to get rid of, so this would be it. I hoped it wouldn’t disappoint.
Here is what you need:
- 1.5 cups cucumber
- 1 cup of water
- 1/2 of an avocado
- 3 stalks celery
- 2 scallions
- 1 cup dill
- 1 cup cilantro
- 1 tbsp curry powder
- 1 tbsp miso paste
- 2 cloves garlic
- juice from 1/2 a orange and 1/4 a lemon
- salt to taste
for topping: dice and salt some tomato
Now just add all of this to the food processor (or VitaMix if you have one) and viola.
I then topped with some salted and diced tomatoes – for color and texture, it was delicious!! So very savory and decadent. The herbs really stood out and gave this soup body.
If you want, you could do a gentle simmer, just dont let the soup get too hot, as that would defeat the purpose. this is a great dish for those wanting to try raw – bc its tastes like a long slow cooked flavorful creamy soup.
I would like to replace cucumber with zucchini next time, to give it a little more body. Enjoy!!!
