Wow – things have been so crazy lately, so let me first apologize for the lack of updates.
From my last post, I mentioned I would be trying to focus my food intake on a high raw diet. I honestly just feel better, in a happier mood, brighter, more alert – all around, GREAT.
So tonight I wanted something really tasty but really fast. We had been doing yard work and chores all day and I was ready to relax. What better than a simple raw gazpacho, but I love flavor, so I would be sure to kick it up a notch! Here’s what I did:
Ingredients (for 1 serving):
- 2 medium/small tomatoes
- 3 cloves garlic
- 1/2 of a hatch chili pepper (you could use a jalapeno too)
- 1/2 medjool date (or agave nectar or honey- just something to give it a hint of sweet to balance). You can find medjool dates in most bulk food sections in your grocery store.
- lemon juice from 1 lemon
- 1/4 c water
- drizzle of olive oil
- handful cilantro
- pinch of salt
Then for the yummy veggies, chop:
- 1/2 red bell pepper (or bell pepper of your choice)
- 1/2 avocado
- 1 stalk celery
- 1 – 2 tbsp. red onion
- 1/4 of a cucumber, de-seeded
