Wow – things have been so crazy lately, so let me first apologize for the lack of updates.

From my last post, I mentioned I would be trying to focus my food intake on a high raw diet. I honestly just feel better, in a happier mood, brighter, more alert – all around, GREAT.

So tonight I wanted something really tasty but really fast. We had been doing yard work and chores all day and I was ready to relax. What better than a simple raw gazpacho, but I love flavor, so I would be sure to kick it up a notch! Here’s what I did:

Ingredients (for 1 serving):

  1. 2 medium/small tomatoes
  2. 3 cloves garlic
  3. 1/2 of a hatch chili pepper (you could use a jalapeno too)
  4. 1/2 medjool date (or agave nectar or honey- just something to give it a hint of sweet to balance). You can find medjool dates in most bulk food sections in your grocery store.
  5. lemon juice from 1 lemon
  6. 1/4 c water
  7. drizzle of olive oil
  8. handful cilantro
  9. pinch of salt
This is the soup base, put all of these in a blender and blend until smooth (about 30 seconds in the vitamix).

Then for the yummy veggies, chop:

  1. 1/2 red bell pepper (or bell pepper of your choice)
  2. 1/2 avocado
  3. 1 stalk celery
  4. 1 – 2 tbsp. red onion
  5. 1/4 of a cucumber, de-seeded
Place your veggies in a bowl (reserve just a little of each to garnish the top) and pour the soup base over.
 
Garnish and you are done!! This has such an amazing flavor, even the KIDS liked it!!
