I love kale! It’s one of the superfoods and soo delicious - when prepped right. But when raw, kale can be bitter and a little too tough for the likings of a salad.The trick to eating raw kale is to break the kale down and get a nice tasty marinade infused into the leaves. So here’s what I did:
1. Start by chopping the kale into thin strips
2. Add salt and massage the kale – about 1 minute
you will notice that the kale is starting to wilt a bit and break down.
3. Now add 1 tbsp. nama shoyu (or soy sauce) and drizzle of olive oil. Then massage again.
The kale is really tender and ready to eat!!
4. Add your toppings and enjoy! I added: fresh squeezed lemon juice (1/2), Bell Pepper, Cucumber, Red Onion and Avocado
