		<description>Hi Mary - sure, we&#039;d be happy to help. Ok, no you dont need a steam per se - but you do need something to elevate the wings out of the water, even if its only a little bit. We used to use an upside down colander until we found this at an asian market (http://www.steellong.com.cn/post/818.html) its called a roasting rack. no we don&#039;t use to many papertowels. Really, just let them rest on plates like you would bacon. I think a cookie sheet would be fine if you didn&#039;t have a rack to put on top - the purpose of the rack is to increase the crispiness, if one side sits directly on the cookie sheet it could get a little soggy. But if you had to, I dont think it would be a problem.
