Now, I’m calling this ice cream – but both days I had it last week it was for breakfast. So I guess you could also call this a smoothie – which ever you want. But hey, who doesn’t want to eat ice cream for breakfast?! Whichever you fancy
I had frozen and fresh fruit on hand and I needed to use it. Now I don’t buy frozen fruit, but if I’m not going to use something and I think it might go bad I simply freeze it and use it for later. I do this a lot with bananas – just make sure you peel them before freezing. So I had frozen pineapple and bananas and thought that would make a good base. This is the MOST simple and easiest thing you could ever make. I just add frozen fruit, a cup or so of almond milk – not too much or you will need a straw – just enough to get the blender going. and VOILA – the best tasting sweet ice cream.
Once you have the base, the possibilities are endless. The first day I just topped with blueberries. The next day, some cantaloupe and coconut…I felt like I was in a tropical paradise. Enjoy!!
Ingredients for ice cream base (serves 1 person)
- 1 frozen banana
- 1 c frozen pineapple
- 1/4 – 1/2 c almond milk
- anything you desire
