I was in a hurry tonight, I coach Hannah’s volleyball team and practice is Monday night. So I had limited time to put dinner together. I also didn’t want to use a lot of dishes, I HATE doing the dishes icon_smile-3 Let’s keep it simple people. Also, this was a ‘use the rest of what’s in your fridge’ kinda meal. Where you just need to use some hodge podge things and clean out.

So this super easy idea came to mind. Saute the veggies, add some stewed tomatoes – to get that, well stewed effect. Some people, including my husband don’t really like ‘stewed’ things, but I love a big mix of veggies all cooked and delicious. Once that was done, I figured I could move the mixture to the sides of the pan and cook the fish in the middle. See – just one pan, keeping it simple. Well it worked, and it ended up being really good.

There weren’t really good ‘after’ photos since the fish came a part a bit as I tried to get the veggies down, then top with fish. But you get the point.

Here is what I used:

  • Onions
  • Garlic
  • Brocolini (1 – 2 stalks)
  • Celery (1 stalk)
  • Zucchini (1/2 to 1 depending on how hungry you are)
  • 1/2 can of stewed tomatoes (w/ juice – I chop them bc the stewed pieces are a little big)
  • 1 piece of fish ( this can be anything, white fish, tilapia, salmon, whatever you have and like)

Directions:

Saute the onions and garlic in grapeseed oil. (I’ve been using grapeseed bc it can take a higher temperature point then olive oil)

Add the rest of the veggies, saute until all soft

Add stewed tomatoes, simmer for 3 – 5 minutes

Move veggies to the side and place the fish in the middle (sprinkle with salt, garlic, pepper, herbs – whatever you like). Cook on each side for a few minutes.
