i woke up new years day and realized i didnt have everything i needed to make my celebratory eggs benedict. hmmm…what to do?! i grew up knowing that for nyd breakfast you have eggs benedict and mimosas and for lunch cabbage, sausage and black eyed peas.

what was i to do?

i sifted through the fridge and found comparable  substitutes: bread would replace english muffins, and bacon would replace canadian bacon.

i whisked the hollandaise sauce to perfection and drizzled it on top of the toast, bacon, poached egg concoction. it was more than perfect!!

what a way to start the new year!
